Perfectly Falafel

Falafel is traditionally a Mediterranean dish, I grew up on it and am so excited to share my families recipe with you. My kids call them “Falafel burgers”, they are very similar to a veggie burger, but they have so much more flavor. Falafel are commonly fried, but I bake mine to be a little more health conscious. I hope you love them as much as we do!

Falafel

1.5 medium onions, cut into large pieces

4 cloves of garlic

1.5 cans of organic chickpeas, drained

1 large handful of flat parsley

1 large handful of cilantro

1/2 teaspoon Himalayan pink salt

1/2 teaspoon black pepper

1 teaspoon ground cardamom

1 teaspoon ground cumin

1/2 teaspoon Trader Joe’s 21 Seasoning Salute

1/2 teaspoon chili powder

1/4 teaspoon ground cayenne pepper

1/2-1 cup of chickpea flour

Preset oven to 425 degrees Fahrenheit

Place onion and garlic in a food processor. Pulse until diced, don’t over process.

Pour the onion mixture into a large bowl and set aside.

Then pour chickpeas, parsley, cilantro and spices into the food processor.

Mix until herbs are well diced, but don’t puree! You want your Falafel to have some texture.

Pour the chickpea mix into the bowl with the onions. Mix well. Then add the chickpea flour, you want enough so that the dough is almost forming a ball, and not too sticky.

Then using your hands form balls, flatten slightly and place on a cookie sheet. You will want to bake them for 15 mins on one side, then turn them and bake for another 5 mins until browned.

I serve ours with a power greens salad, cucumbers and cashew dressing.
